Firework Funfetti Cupcakes

Prep Time: 15 minutes. Bake Time: 12-15 minutes. Makes: 12 Cupcakes

As we are now in a second lockdown and with it also being Bonfire night, we understand that this may have not been the evening that you’ve all planned and even your food preparations ideas may have changed. However don’t feel too down and try to make the most of the night by having as much fun as you can at home. You can watch movies, create some entertainment with your family and bake some easy but fun bakes that will make you feel like it’s bonfire night!

We’re sharing our classic recipe which only requires store cupboard ingredients with the addition of colourful sprinkles! The key is to make your cakes look colourful and as soon as you cut into them they will give you that pop of colour.

With the weather getting dull and cold, seeing fireworks made this time of year more exciting- those bright lights and patterns in the sky really put a smile on people’s faces but don’t let what’s happening in the world stop you from enjoying yourself! Just because you’re at home doesn’t mean you can’t still have fun. Although baking isn’t the same as going out and seeing fireworks, it’s a great way to help your mental health as it’s very therapeutic, it’s a lovely family activity, the smell of freshly baked cakes will definitely put a smile on your face and you’ll enjoy the evening just as much as you would’ve if you went out. What more could you need? Delicious food, great movies and a cosy night in! Sounds perfect!

Ingredients needed for the cupcake mix:

-125g self raising flour

-125g softened butter

-125g caster sugar

-1tsp vanilla extract (you can use any flavour extract you wish)

-40g sprinkles (you can also use any type of sprinkles you wish and if you don’t have sprinkles, you can use dried fruit, a dash of food colouring, small sweets chopped up etc….just find anything colourful in your kitchen and you’ll still have colour in your cupcakes!

-2 eggs (substitutes available on Android and iOS)                                

Ingredients needed for the buttercream:      

-400g icing sugar

-125g softened butter

-1tsp vanilla extract (you can use any flavour extract you wish)

-More sprinkles


1. Preheat the oven to gas mark 4/ 350F/ 180C and line a 12 hole muffin tray with cases.

2. Next cream the butter and sugar until light and fluffy, then gradually add in the eggs one at a time and combine well. Then mix in the vanilla extract.

3. Then sieve in the flour and and mix through thoroughly until you have a cake mixture. Then add in your sprinkles and make sure they’re evenly combined through the cake mixture.

4. Pour the mixture into each case filling about 3/4 full and bake in the oven for 12-15 minutes or until golden brown. To check if they’re cooked all the way through, place a butter knife through the centre and if it comes out clean then the cupcakes are done. Let the cupcakes cool for around 10 minutes before you remove them from the tin to decorate.

5. While the cupcakes are cooling make the buttercream topping. Start by mixing the butter and icing sugar using a wooden spoon until light and creamy then add in the vanilla for extra flavour. Once the cupcakes have cooled remove from the tin and pipe the buttercream mix over the top and decorate! These cupcakes will be sure to bring those exciting colours and a wonderful display to your end of night dessert!
