Christmas Recipe Day 3…
Prep Time: 1hr 40 minutes. Bake Time: 12 minutes. Makes: 24 snowballs
Snowballs seems like the perfect recipe to share with you all today as it has already started to snow around the UK and we’ve noticed that it’s settling which is such a lovely thing to see. With the decorations we’ve done inside and now with with the outside having a beautifully set blanket of snow on the ground it really does feel like Christmas. The snowballs bake that we have created a couple of years ago has been a hit every year around Christmas time- they’re easy to make and delicious to eat so why not give them a go and get everyone involved in making them too…
-500g strong bread flour
-2 1/4tsp yeast
-2tbsp olive oil
-250g icing sugar
-200g desiccated coconut
-1tbsp caster sugar
-300ml warm water
1. Start off by adding the flour, salt, sugar and yeast into a large bowl. Then in a measuring jug add the water and oil and mix well.
2. Next add the wet mixture to the dry mixture and combine everything together until you have a soft dough. If your mixture is too dry and a little more water and if your mixture is too wet add a little more flour.
3. Once your dough is ready, knead on a clean floured surface for approximately 10 minutes. Then place the dough into a large bowl and cover with a tea towel for approximately an hour for it to double in size.
4. Once your dough has doubled in size roll out into a log on a clean surface and cut out 24 equal pieces. Then using the palm of your hand make a ball and repeat this for all 24 pieces. Then place the dough balls on a lightly greased baking tray, making sure that you leave at least 2cm apart between each one (use multiple baking trays if needed).
5. Then cover the baking tray with the tea towel and let the dough balls double in size for another 30 minutes. Once your dough balls are ready preheat the oven to gas mark 5/ 375F/ 190C.
6. Bake the dough balls in the oven for approximately 10-12 minutes or until golden brown.
7. Once your dough balls are ready, let them cool for about 10 minutes before you decorate them.
8. While the dough balls are cooling, prepare the icing. Add the icing into a large bowl and add in a couple of drops of water and mix well (add another drop or 2 if it seems too thick). Also keep a plate of desiccated coconut ready as well.
9. Once your dough balls are ready dip them into the icing making sure they’re covered fully, then roll into the desiccated coconut. This will appear to look like a snowball and repeat with all the dough balls. Then once you have covered them all, sprinkle with a little edible glitter to if you wish to give them that sparkle.
